Jellied Chicken:
Starting Process: Cook the 4 lb. chicken in boiling water with 2 onions, 1½ tbsp. salt and a handful of celery tops. Simmer gently for about 2 hours. Cut meat in small pieces. There should be 3 to 4 cups of cutup meat. Strain the liquid and boil rapidly until reduced to about 2¾ cups. Ingredients: 1. 2 tbsp. gelatin 2.4 tbsp. cold water 3. 2 cups hot broth, chicken, (veal, beef or lamb) 4. 3 to 4 cups coarsely cut-up cooked meat 5. 1 tsp. salt Preparation Directions: 1. Soak gelatin in cold water 2. Then add to the hot broth, stirring to dissolve completely. Let mixture cool until it begins to thicken. Then add cut-up cooked meat and salt. 3. Pour into an oiled bread loaf pan (3½ by 8½ inches across the bottom and 2½ inches deep). Chill until "set". 4. Unmold and serve on a platter garnished with parsley bouquets, radish roses, tomato wedges, and lettuce, endive or watercress. This makes 8 to 10 servings. |

Ingredients: 1. 2 cups enriched flour 2. 1 teaspoon baking powder 3. 1/2 teaspoon soda 4. 1/2 teaspoon salt 5. 2 teaspoons cinnamon 6. 1 teaspoon cloves 7. 1-1/2 teaspoon allspice 8. 1 cup packed brown sugar 9. 1/3 cup shortening 10. 1- 1/4 cups water 11. 1-1/2 cups raisins 12. 1/2 cups coarsely chopped walnut meats Preparation Instructions: 1. Sift flour, measure; sift again with baking powder, soda, salt, and spices. 2. Combine sugar, shortening, water, and raisins in uncovered 2 quart saucepan. 3. Bring to a boil; cook rapidly 5 minutes, stirring frequently. Cool. 4. Add flour mixture and nut meats. Mix thoroughly. 5. Pour into well greased paper-lined square cake pan. Bake in moderate oven (350 degrees) 45 minutes, or until done. |
Stew Recipe For 20 Persons:
Ingredients 1.6 pounds beef chunk in cubes 2.1/2 cup flour 3. 1 tablespoon salt 4. 1/2 teaspoon pepper 5. 1-1/3 cups fat 6. 1- 1/2 quarts hot water 7. 1/2 cups sliced onions 8. 1-1/2 cups diced celery 9. 2- 1/2 cups sliced carrots 10. 1 quart tomatoes 11. 1/2 cup chili sauce Preparation Instructions: 1. Roll meat cubes in flour, salt and pepper and brown on all sides in hot fat. 2. Place in large deep kettle, cover with hot water, and simmer, covered, for 2 hours. 3. Add vegetables and chili sauce and continue to simmer for 30 minutes. 4. Serve with hot boiled rice or steamed potatoes. |
